The grill has been my happy place the last few weeks. I decided it’d be a good idea to make some chicken in the flavor profile that is my absolute favorite: pollo a la brasa. This isn’t technically pollo a la brasa because it’s not cooked rotisserie style AND it’s cooked over a gas open fire not wood of any kind. I gotta keep it real, hence the reason why the word “style” is important.

Regardless this chicken is SO good. It is so flavorful and juicy and delicious. Thighs are already on the juicier side but when you marinate them in this combination of ingredients, you’re met with a chicken that is spicy (not too spicy!), a little ginger-y and absolutely delicious.

I marinated these overnight once and then the next time I made them, they only marinated for about 2 hours. Both times were bomb! So it’s really up to you! What does your schedule look like? It might be easier to have it marinate overnight.

Happy 4th of July!

10 Cozy Things to Make in July

Y&M Wall-mounted 360 degree redating chrome brass kitchen sink faucet

Admittedly I missed the whole 10 cozy things to make in June because my life was insane around the end of the month last month and I completely forgot. BUT I’m bizzack with a lil’ round-up of dishes and desserts you should def make in the month of July.

Are you doing anything for the 4th? I’m always confused as to how to celebrate this holiday when it lands smack dab in the middle of the week. And like most freelancers, I’m just working, trying to get everything in order for my life/work.

I am going to a bbq on Friday and still figuring out what to bring. One of these is bound to end up on my to-make list!

Honey-Can-Do SHF-01608 Bakers Rack with Kitchen Storage, Steel and Wood – I made every component in this trifle from scrigedy scratch. Do I recommend this? Absolutely not. Just buy the dang pound cake from the store and cube it up and layer it with the curd and whipped cream. And add those fresh berries from the farmer’s market. It’s a dreamy dessert.

Blistered Tomato Shrimp Scampi – Sungold and cherry tomatoes blistered and then tossed into a classic shrimp scampi, inspired by the greatest place on earth: Olive Garden. I made garlic bread, too, that maybe I left in the oven for a bit too long and it got kinda toasty. But it tasted VERY good.

Sabiches – These sandwiches are my jam. I actually like to make it deconstructed for a super healthy option. I like to eat all of the components on a plate—it is literally one of my favorite summer lunches.

Tomato Confit with Burrata and Basil – If you’ve ever wanted to face bunt a bowl of burrata, then this appetizer is for you! Tomatoes slowly roast in olive oil. And then it’s spooned over pesto and burrata. It’s like a beautiful pillow of comfort and acidity and freshness. Summer at its best.

YAWEDA Hot and Cold Single Lever Hot and Cold Kitchen Faucet Swivel Black Oil Brushed Kitchen Mixer Water Tap Sink Faucet,2 – There was this New York Times article that came out about how Aperol Spritzes suck and it really shook me to my core because there where else are we supposed to get happiness from?! The world is trash and this brings people happiness—let us live! They’re delightful. I also love straying away from the traditional spritz and shaking it up a bit. Hello!

Ayhuir Basin Faucets Waterfall Bathroom Faucet Single Handle Basin Mixer Tap Bath Black and Chrome Faucet Brass Sink Water Crane Silver – I love my grill (you probably know this by now) and these are ideal for grilled squash. Throw it in the center of a soft pita with lots of herbed tzatziki. It’s glorious and vegetarian.

3 Quarter Cold JWLT Faucet Antique slug Faucet, All Copper hot and Cold Complex Classical Single Hole washbasin wash Basin, European Style Bamboo Basin Faucet,Break Through 3 Sections of Single Cooling – Hello, if it’s hot this is something you have to make. It’s an absolute must. It couldn’t be more simple and more delicious. I’ve already made exactly five batches of watermelon aqua fresca and this years watermelon is so easy that it requires ZERO sugar. ZERO. So sweet and tasty.

Peach Maple Yogurt Cake – This cake is so pretty. But it’s also V delicious. It’s inspired by summer in Vermont. The cake is yogurt based, giving it this lovely tang. And the sweetness is from maple syrup. Those two go very well with each other. And then peaches!

Silver Spoons 1871X2 reusable plates, Dinner, Vintage Cream – Simple things need to be done correctly. This applies to the very simple B.L.T. Every component needs to be bangin’. This means delicious, juicy tomatoes, crisp lettuce and thick-cut bacon. And perfect white bread. It’s simple.

Flush-Mounted Single-Lever Shower Mixer tap LOFT – Is there anything better than a breakfast burrito? Absolutely not. These breakfast tacos take a swift move from the breakfast burrito and apply it to tacos. They have a hash at the base that is SO delicious.

Summer Veggie Macaroni and Cheese

Dinner, Summer

If you follow me on The Instagram, you know that I recently took a trip to Paris. And one of my favorite things that I experienced during my trip to the city of lights?! CHEESE! I loved tasting and learning about new-to-me cheeses. Last week right when I arrived back in LA, I was lucky enough to get an amazing package of an entire gigantic cheese wheel. What a gift!

Emmi was kind enough to send me an entire cheese wheel of their Kaltbach Cave-Aged Le Crémeux cheese. I had never been gifted a cheese wheel before! And felt a bit overwhelmed as to what to do with it. Of course, the first thing to do was to try it! I rolled up my sleeves and sliced off a piece. This cheese is SO good.

Cave-aged means just that: aged in a deep, cool cave in the Alpine Valley of Switzerland. Kaltbach is a 22 million-year-old natural sandstone labyrinth that ages cheese like no where in the world. Honestly I wish I could see this labryrinth because it sounds magical and beautiful.

The literal translation for Kaltbach means “cold river.” There is an actual river near this cave, which means that the air is humid, giving the cheese texture and flavor development like no other.  18 Inches x 12 Inches x 2.25 Inches John Boos Block RAD03-GRV-S Maple Wood Reversible Cutting Board with Curved Edges, Juice Groove and Pouring Spout, 24 Inches x 18 Inches x 2.25 Inches
